This morning I set out to make the jam. I started off with prayer because well I need it. I am an expert at attempting things and wasting my time and ingredients! While the cans were boiling I cut the stems off and thought of Amelia Bedelia. What mishaps would she made while making jam for the first time!
I put the strawberries in a blender to mash them.
I added the pectin (no sugar added for less sugar count) and 1/4 cup sugar.
Boil the berries and pectin to a full boil for one minute. Then add the remaining sugar (4cups) and boil one minute. [note: If I had used regular pectin and not no sugar or low sugar then I would of needed to add 7 cups of sugar, so this way it is less sugar which is better.]
Then you boil it for one minute and remove from heat. Stir completely and let it sit for 5 minutes. This allow the berries to float to the top. Then you take a funnel and pout them into the jars. Put the lids on and boil for 10 minutes. Place boiled jars on towel on container so the hot jars do not crack. Allow to cool.
My little helper HooDoo rinsing the dishes with a mouth full of strawberries.
My other little helper Smiley eating his strawberry and loving it!
My first taste testers who loved it!
The finished product 4 jars of homemade strawberry jam. From all who have tasted said it is good and I myself agree. I cannot believe I made homemade jam. It was easy, fun and delicious! Wish all my friends lived closer I would call you up for an invite of biscuits and jam!
